S’mores Cookies

This is a delicious variation on the 5 layer bar cookie. Graham cracker crust, chocolate, caramel, nuts and marshmallow. How can you go wrong with ingredients like that?!

S’mores Bar Cookies

This is the classic 5 layer bar, that you can find on the sweetened condensed can, with the substitution of mini marshmallows for the coconut.  One of my tricks is that I melt the butter in the 9 x 13 pan while the oven is preheating.

As a Girl Scout troop we’ve tried just about every variation of S’mores while we’ve been camping. These cookies can be cooked in a box oven with 7 coals.

10 ounces graham crackers (18 whole crackers)
1 1/2 sticks butter, melted
1 1/2 cups semisweet chocolate chips
2 cups mini marshmallows
1 cup chopped walnuts (helps to cut the sweetness of the cookies)
1 14 ounce can sweetened condensed milk

1. Preheat the oven to 350 degrees. In a food processor, process graham crackers until finely ground. Pour in melted butter. Press into a 13×9″ pan.  Bake for 5 minutes.  Remove from oven.
2. Sprinkle on chocolate chips and walnuts. Drizzle can of condensed milk over them and follow with marshmallows.
3. Bake for 20 minutes more, until marshmallows are lightly browned.  Let cool completely.

We can’t sell you girl scout cookies online so sharing our favorite recipes is our attempt at a virtual bake sale. Your donation will help us go to Maine to volunteer at Camp Sunshine, a camp for children with life threatening diseases and their families,  this summer.
