Butter Pecan Turtle Cookies

When I was in college at Cornell, I belonged to the Tri-Delta sorority.  I loved it and in a big university like Cornell, it was nice to have a small group of friends that kept one from feeling lost.

After I graduated I discovered that one of the nice bonuses of belonging to a national sorority is that you can find an alumnae group in just about any city. I made new friends (and was introduced to some nice boyfriends) and felt at home right away because of the alumnae groups in Boston, Chicago, Los Angeles and San Diego.  They always had nice social events.  When I lived in Boston we had a cookie exchange and I got some wonderful recipes, this was one of them.  Butter Pecan Turtle Cookies

Crust: 2 cups all purpose flour

1 cup brown sugar

1/2 cup butter softened

 

mix until fine particles.  Pat into 9×13″ (I use my glass pan).  Sprinkle with 1 cup whole pecan halves.

 

Caramel layer: 2/3 cup butter

1/2 cup brown sugar

 

cook over medium heat, stirring constantly until entire surface begins to boil. Boil 1/2 to 1 minute.  Pour caramel layer over crust.  Bake for 18 to 22 minutes at 350, until caramel layer is bubbly and crust is golden brown.  Remove from oven.  Sprinkle with chocolate chips, spread when melted.  Now go back and finish the pecan filling for the pecan bars.
