Lemon Butter Pound Cake Bars

These bars are easy to make,  lemony and so pretty on a tray of goodies! Lovely with tea and they’ll be a big hit at a cookie exchange party.

Lemon Butter Pound Cake Bars

1 cup butter

2 cups sugar

4 eggs

2 cups self rising flour

1/3 cup lemon juice

2 Tblsp. grated lemon peel

Lemon Glaze, below

Heat oven to 375oF.  Grease bottom of a 13×9 inch pan.  In a large saucepan, melt butter over medium heat; remove from heat.  Stir in remaining ingredients except glaze in order listed, mixing well after each addition.  Spread batter in prepared pan.  Bake for 35 to 45 minutes or until top is golden brown.  Cool 10 minutes; drizzle with glaze.  Cut into 48 bars.  Lemon Glaze: Combine 1cup confectioners’ sugar and 2 tablespoons lemon juice; stir until smooth.
