Dutch Oven Stew

- 2 lbs. beef cubed, and browned in 2 Tblsp. oil a large Dutch Oven
- add 1 sliced onion
- 4 carrots, peeled and sliced
- 4 potatoes, peeled and cut into chunks
- 1 envelope onion soup mix
- 1 cup water
Heat the dutch oven over 10 coals, evenly spaced in a circle. Add oil and meat and brown the meat. Add the onions and cook till translucent. Add the other vegetables and sprinkle the soup mix over all. Add waterand cover with a lid. Put 5 coals on top of the lid and cook for 4 hours. Adding more coals when necessary to keep up a gentle simmer.
